    Cabbage: Gingered Cabbage

    List of Ingredients




    1 tb Olive Oil Or Peanut Oil
    1 Head Savoy Cabbage (see note)
    1 tb Minced Garlic
    Salt And Pepper To Taste
    1 tb Garlic Peel, Mince
    Juice Of 1 Lemon
    Fresh Parsley Minced

    ( Note: any cabbage or chard can be used, about 1 1/2 lbs, core, shred, chop)

    Recipe



    Heat the oil in a large skillet over med-high heat, and saute the cabbage, stirring occasionally. When it is limp but not mushy, after about 10 min, add the garlic, salt and pepper, and cook another 2 min, stirring. Add the ginger, cook another minute, and remove to a platter. Drizzle with the lemon juice, sprinkle with the parsley and serve. Makes 4 servings
