Tomatoes: Crispy Baked Green Tomatoes

green tomatoes, sliced 1/4" thick
1 egg white beaten w/ 1 tbl. water
cornmeal
1 pinch salt
1 pinch sugar
1 pinch black pepper
1 pinch cayenne pepper
1 pinch dill or basil or parsley (or all 3)
Recipe
Preheat oven to 400ºF . Mix cornmeal and spices and sugar (I think the sugar is important to cut the bitterness of the green tomatos) Dip the tomato slices in the eggwhite, then into cornmeal mixture. Bake on a 'Pam sprayed cookie sheet for about 15-20 minutes- the time will depend on how thick and how juicy the tomatos are. Carefully flip them halfway through the cooking time.
