    Tomatoes: Fried Green Tomatoes & Chutney

    List of Ingredients

    3 green tomato
    2 cups oil
    1 1/3 cups self-rising flour
    1 teaspoon salt
    1 teaspoon black pepper
    1 1/2 cups buttermilk
    2 eggs

    Recipe

    Wash and slice the tomatoes (approximately 1/4" thick slices). Mix buttermilk and eggs in a mixing bowl. Add 1/2 the salt and pepper and 1 tbsp. of flour. Mix well. Place tomato slices in the buttermilk-egg mix. Preheat oil to 350ºF. in a heavy skillet or electric fryer. Mix the remaining flour, salt and pepper in a mixing bowl. Toss the tomato slices in the flour. Place in the oil and fry until golden brown, turning two to three times. Cook until crisp; drain on paper towels and serve immediately with tomato chutney as an accompaniment.


    TOMATO CHUTNEY
    1 (14-oz.) can whole tomatoes, chopped, not drained
    1 cup light brown sugar
    1/2 cup granulated sugar
    2 green bell peppers, chopped finely
    1 medium onion, chopped finely
    2 tbsp. tomato ketchup
    6 drops Tabasco sauce
    1 tsp. black pepper
    Mix all ingredients in saucepan or small stock pot. Bring to a boil; allow to simmer for 2 hours or until cooked to a thick sauce.
