    Carrots: Garlic Carrot Medley

    List of Ingredients

    2 cups baby carrots, halved lengthwise
    1/3 cup water
    3 tablespoons butter
    1/4 cup chopped green or red bell pepper
    1 medium yellow squash, sliced 1/4" pieces, halved
    1 medium zucchini, sliced 1/4" pieces, halved
    1/4 teaspoon salt
    1 tablespoon chopped fresh basil leaves

    Recipe

    Combine carrots and water in 2 quart saucepan. Cover and cook over medium heat until carrots are crisply tender, 8-10 minutes. Drain. Add butter to carrots in pan. Add peppers, squash, zucchini and salt. Cover and continue cooking, stirring occasionally, until squash is crisply tender, 6-8 minutes. Stir in basil. Serves 6.
