Broccoli Rabe: Garlicky Broccoli Rabe

1 large bunch broccoli rabe (1 1/2 lb)
1 tablespoon extra virgin olive oil
3 cloves garlic, finely chopped
1/4 teaspoon dried red pepper flakes
salt and pepper to taste
Recipe
Cut the broccoli rabe stems and buds into 1- 2" lengths. Add them to a large pot of salted boiling water and cook, uncovered, at a rolling boil for 4-5 minutes until almost tender. Drain into a colander. Heat the oil in a large skillet. Add the garlic and cook over medium heat, stirring, until fragrant but not brown, about 1 minute. Add the broccoli rabe and red pepper flakes. Cook, stirring, until broccoli rabe is heated through and tender, 2-3 minutes. Season with salt and black pepper to taste before serving. Makes 4 side-dish servings.
