Summer Squash: Green & Yellow Summer Squash

2 tablespoons olive oil
2 medium zucchini, diagonal cut 1/8" thick slices
2 medium yellow summer squash cut like zucchini
1 tablespoon red wine vinegar
1 small clove garlic, minced
Recipe
In large heavy skillet, combine oil, garlic and squash; toss to combine. Place over medium-high heat and cook, tossing frequently, til squash begins to brown but is still crisp-tender, about 5-7 minutes. Stir in vinegar. Season to taste, transfer to platter and sprinkle with cheese. Serve immediately.
