    Carrots: Honey-Glazed Carrots

    List of Ingredients

    4 medium carrots -- peeled, sticks
    2 tablespoons lemon juice -- fresh
    2 tablespoons honey
    2 teaspoons unsalted margarine
    2 teaspoons lemon zest
    1/8 teaspoon ground coriander
    1 tablespoon cilantro -- chopped
    1/8 teaspoon pepper

    Recipe

    In large nonstick skillet, combine carrots, juice, 2 tablespoons water, the honey, margarine, lemon zest and coriander; bring to a boil. Reduce heat to low; simmer, covered, 5 minutes, just until tender. Uncover and increase heat to medium; cook stirring occasionally, 3 minutes, until most of the liquid has evaporated and carrots are glazed. To serve sprinkle with cilantro and pepper.
