Carrots: Honey and Brandy Carrots

3 pounds carrots, peeled, cut diagonal 1/4" slices
2 tablespoons sugar
4 tablespoons unsalted butter, divided
1 teaspoon salt
3 cups water
1 1/2 tablespoons light brown sugar
3 tablespoons brandy
3 tablespoons chopped flat leaf parsley
Recipe
In heavy saucepan, combine carrots, sugar, 1 tbl. butter, 1 tsp. salt and water, and bring to a boil. Reduce heat to a simmer and cover pan. Cook until carrots are tender when pierced with a knife, 10-15 minutes. Drain well, taste, and add more salt as needed. Melt remaining 3 tbl. butter with brown sugar and honey in a large heavy skillet over medium high heat. When sugar has dissolved, add carrots and saute until they are well coated and heated through. Add brandy and cook for 3-4 minutes more. To serve, arrange in bowl and sprinkle with parsley. Serves 8.
