Tomatoes: Marinated Garden Tomatoes

6 large tomatoes, cut into wedges
1/2 cup thin sliced green onions
1/3 cup olive oil
1/4 cup red wine vinegar or cider vinegar
1/4 cup minced parsley
2 cloves garlic, minced
1 teaspoon salt
1 tablespoon snipped fresh thyme
1/4 teaspoon coarse ground pepper
Recipe
Place tomatoes and onions in a shallow serving bowel. In a bowl, combine the remaining ingredients; pour over tomatoes. Cover and refrigerate at least 2 hrs or overnight. YIELD: 10 servings
