Artichokes: Microwave Artichokes

Trim artichoke 1 inch from top and close to base so it will stand. Rinse and shake off water. Brush with lemon juice to prevent discoloration. Place in 8x8 dish with 1/4cup water. cover with plastic wrap and microwave on high for 4-5 minutes, til lower leaves can be pulled off and base pierces easily with fork. Let stand 3-5 minutes. Artichokes for two: microwave on high 5 1/2 - 8 1/2 minutes, rearranging once. Butter dip: Place 1/4 c. butter in small bowl. Melt butter and stir in 1/4 tsp lemon juice. Mustard dip: soften 3 oz cream cheese; blend in 1 Tbl. mayo and 1/2 tsp Dijon mustard (double for 2 artichokes).
