Mushrooms: Mixed Mushroom Saue with Tarragon

List of Ingredients
1 tablespoon olive oil
1/2 pound domestic mushrooms, quartered
1/2 pound fresh wild mushrooms -- trim and slice (morel, shiitake, oyster, etc)
1/4 cup finely chopped shallots
1/2 cup dry white wine
2 tablespoons chopped fresh tarragon or 1 tsp dry
2 tablespoons chopped flat leaf parsley
Recipe
Heat oil in large, preferably nonstick skillet. Add the mushrooms and cook over medium high heat, stirring frequently, until they produce liquid and begin to soften and brown, about 4 minutes. Add the shallots and cook, stirring, for 1 minute. Add the wine and tarragon to the skillet. Cook, uncovered, over medium heat until most of the liquid is reduced and absorbed and the mushrooms are tender, 2-3 minutes. Season with salt and pepper to taste, and sprinkle with parsley before serving. Serves 4.
