Onions: Creamed Spring Onions

List of Ingredients
4 Bunches spring onions, Shallots or leeks
3 tb Butter or margarine
1/2 c Flour, all-purpose
1/2 c Evaporated milk
1 c Water
3/4 ts Salt
1 c Grated Cheddar cheese
Toast, cornbread squares or Muffins Recipe
Trim roots and ends of tops from onions. Wash thoroughly, chop coarsely, and cook in boiling salted water until tender. Melt butter in skillet. Stir in flour; then add milk and water and cook until mixture thickens. Add salt and grated cheese; stir until mixture is blended. Drain onions and place on toast, cornbread squares, or muffins. Pour sauce over all.
