Carrots: Polynesian Carrots

1 cup crushed pineapple (drain and reserve 1/4c)
1/2 cup water
1/2 teaspoon apple pie spice
3 cups shredded carrots
1/4 cup raisins
2 tablespoons chopped pecans
Recipe
In large skillet, combine juice, water and pie spice; add carrot and mix well to combine. Cover and cook over medium heat, stirring occasionally til tender, about 8-10 minutes. Stir in raisins, pineapple and pecans. Lower heat and continue cooking til mix heated through, about 5 minutes, stirring often.
