    Potato & Artichoke with Green Onions

    2 packages frozen artichoke hearts
    1/2 pound baby red skinned potatoes
    6 green onions, cut in 1" lengths
    1 tablespoon butter, melted
    1 teaspoon crushed dried rosemary

    Recipe



    Cook the artichokes in boiling water for 5-7 minutes or until tender and drain. Cook the potatoes in boiling water for 12-15 minutes or until tender and drain. Cut the artichokes and potatoes in quarters and place them in a bowl. Add the remaining ingredients and toss together until nicely mixed. Place vegetable mixture in 1 layer in a broiler pan and broil, 4 inches from the heat, turning until nicely browned on all sides. Serves 8.
