Parsnips: Roasted Parsnips

List of Ingredients
4 medium parsnips; peel, trim and half lengthwise
1 clove garlic, minced
1 tablespoon olive oil
salt and pepper to taste
parsley, thyme or marjoram
Recipe
Heat oven to 400ºF. Toss parsnips, garlic, and olive oil in a bowl. Season with salt, pepper and herbs. Place in covered baking dish. Bake in oven for about 20 minutes, removing cover and basting parsnips with juices occasionally. Water may be added if necessary. When tender, remove cover and bake until browned, no more than 20 minutes more.
