Asparagus: Sara's Roasted Asparagus

1 pound fresh asparagus, wash, trim, peel
3 tablespoons olive oil
1 tablespoon balsamic vinegar
salt and pepper
Recipe
Preheat oven to 475ºF. In a roasting pan, toss the asparagus with the olive oil and vinegar until coated. Spread asparagus out in a single layer, if possible. Roast asparagus for 10 minutes until tender. Season with salt and pepper. Transfer to a serving dish. Yield: 2 to 3 servings
