    Asparagus: Sesame Asparagus

    3 teaspoons rice wine vinegar
    4 tablespoons sesame oil
    salt
    2 1/4 pounds medium asparagus spears, trimmed
    2 tablespoons toasted sesame seeds
    2 1/2 tablespoons grated orange peel

    Recipe

    Mix vinegar and sesame oil in small glass bowl and set aside. Bring 4 quarts water to a boil in a deep sided skillet or large saucepan. Add 1 tbl. salt and the asparagus. Cook until asparagus spears are just tender, 3-4 minutes. Time will vary depending on thickness of spears. When done, remove asparagus and drain well in colander. Pat dry with a clean kitchen towel. Transfer warm asparagus to a large bowl nd toss well with vinegar oil mixture. Add salt as needed. Arrange spears on serving platter, then sprinkle with toasted sesame seeds and orange rind. Serve warm. Serves 6.
