    Snow Peas in Basil Vinaigrette

    List of Ingredients





    2 tablespoons lime juice
    2 tablespoons balsamic vinegar
    2 green onions, sliced thin
    3 tablespoons olive oil
    1 clove garlic, minced
    1 tablespoon chopped fresh basil
    1/4 teaspoon salt
    fresh ground black pepper
    1 1/2 pounds snow peas, trimmed
    1/4 cup toasted sliced almonds

    Recipe



    Combine lime juice and vinegar in a small bowl. Add green onions and let steep for 5 minutes. Whisk in oil, garlic, basil, salt and pepper; set aside. Bring to boil 3 quarts of water. Add snow peas and stir once. Cook 1/2 minutes, then drain and cool under cold water; drain again. Toss with vinaigrette and almonds just before serving. Can eat hot or cold.
