    Spinach: Gourmet Baked Spinach

    List of Ingredients




    1 lb Spinach, fresh
    2 tb Onion, minced
    3 tb Butter melted
    3 tb Flour, all-purpose
    2 c Milk
    1/4 ts Nutmeg, ground
    3 Eggs hard-cooked, finely chopped
    Salt to taste
    Pepper to taste
    1/2 c Cheese, American shredded
    1/2 c Breadcrumbs buttered
    Paprika

    Recipe



    Wash spinach thoroughly. Cook in a small amount of boiling salted water until tender; drain and chop. Cook onion in butter until transparent. Add flour and blend well; add milk and cook and stir until smooth and thickened. fold in spinach, nutmeg, and eggs; season with salt and pepper. Spoon into a buttered shallow baking dish; top with mixture of cheese and breadcrumbs, and sprinkle with paprika. Bake at 375 degrees for 20 minutes or until lightly browned. Serves 6.
