Summer Squash: Squash Casserole

List of Ingredients
1 pound Yellow squash -- sliced
1 medium Onion -- chopped
2 carrots -- coarsely grated
1 stick Unsalted butter -- (1/2 c.)
1 cup Sour cream
1 can condensed cream of chicken soup -- (10 3/4 oz.)
2 cups Pkg. Cornbread stuffing mix
Pimientos- -- (1 small can)
Recipe
Preheat oven to 375ºF. In large skillet w/ oil, saute onions, carrots, squash & butter till tender. Stir in sour cream & soup. In 2 qt. Baking dish, spread stuffing mix on bottom. Spread squash mixture over stuffing. Cover & bake till heated throughout. Remove from heat. Sprinkle pimentos on top. Cover & let stand till ready to serve.
