    Summer Squash: Squash Au Gratin

    1 c Water
    2 lb Squash, summer
    1 t Salt
    1/8 ts Sugar
    1/4 c Butter
    1 1/4 c Cheddar, cubed
    1 c Sour cream
    1/2 c Onions, chopped
    1/3 c Parmesan, grated
    1/4 c Wine, white
    1 c Bread crumbs
    3 tb Butter

    Recipe



    Slice squash. Bring water to boil in saucepan. Add squash, salt, and sugar, and cook, uncovered, over moderate heat until squash is tender (about 20 minutes). Drain. Preheat oven to 350. Add butter and mash (do not use food processor) until mixture is well blended. Stir in Cheddar, sour cream, onion, Parmesan, and wine. Salt and pepper to taste. Pour into 11" au gratin dish; melt butter, combine with bread crumbs, and sprinkle on top of squash. Bake 20-30 minutes, or until bubbling and golden on top. Serves 6
