Summer Squash: Summer Squash with Sour Cream

2 pounds squash, cut 1" strips
1 teaspoon salt
1/3 cup chopped onion
2 tablespoons butter
1 cup sour cream
4 teaspoons flour
paprika
Recipe
Sprinkle squash with salt. Let stand 1 hour to improve flavor. Cook squash and onion in butter over low heat. When
squash is tender, add sour cream mixed with flour. Bring to a boil; remove from heat. Sprinkle with paprika. Makes 6 servings.
