Carrots: Sweet Carrots

2 pounds carrots
3/4 cup honey
2 tablespoons flour
1/2 teaspoon salt
1 tablespoon lemon juice
2 tablespoons butter -- melted
Recipe
Peel carrots and slice into very thin rounds. Cook carrot rounds in salted water to cover for about 8 minutes, til almost tender. Add salt, honey and lemon juice. Simmer until liquid in pan is reduced to half of original volume. Blend flour into butter Add to carrots, stirring. Bring mix to boil and simmer for 1 minute.
