Parsnips: Tender Baked Parsnips

List of Ingredients
4 parsnips, peel, trim and halve
boil until tender (about 1 lb.)
1 tablespoon lemon juice
1 teaspoon lemon zest
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground nutmeg
2 tablespoons unsalted butter
2 tablespoons minced parsley
Recipe
Preheat oven to 350ºF. In saucepan in which you cooked parsnips, toss them with lemon juice, zest, salt, pepper and nutmeg. Transfer all to an oiled 8x8" baking dish. Dot parsnips with butter and bake, uncovered, until butter has melted and parsnips are heated through, about 20 minutes. Transfer to serving dish and sprinkle with parsley. Good with pot roast, pork chops or ham. Serves 4.
