6 bags carrots, cleaned, scraped, chopped
salt and pepper to taste
1 teaspoon nutmeg
2 sticks butter
1 pound grated cheddar cheese
Recipe
Boil carrots until tender. Mash with butter, salt, and pepper. Add nutmeg; mix in half the cheese. Put remaining cheese on top. Bake at 350ºF until top is golden brown and bubbly. Easily halved. Serves 20.
