Zucchini: Sauteed Zucchini w/ Lemon

6 small zucchini
2 tbl. olive oil
dash salt
dash fresh ground black peper
1/8 tsp red pepper flakes
2 tbl. lemon juice
2 tbl. finely chopped fresh parsleyRecipe
Trim ends off zucchini and cut the squash into 1/8" slices. Heat oil in skillet over medium high heat; add zucchini, salt and black pepper. Cook, shaking and tossing, until it starts to take color. Add pepper flakes and lemon juice and cover skillet. Cook about 2 minutes more (do not overcook). Serve sprinkled with parsley flakes. Serves 4.
