Tomato: "Fried" Green Tomatoes

1/2 cup cornmeal
1/2 cup flour
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
4 large green tomatoes, cut 1/2" thick slices -- horizontally cut
Recipe
Preheat the oven to 400ºF. Combine the cornmeal, flour, salt and pepper in a flat dish; set aside. Lightly coat a baking sheet with nonstick cooking spray. Dip each tomato slice in cool water, dredge in the cornmeal-flour mixture, and place in a single layer on the baking sheet. Bake 15 minutes, turn the slices over, sprinkle with the Parmesan, and bake 5 minutes more. Serve at once.
