1 cup nonfat cottage cheese
1/4 cup nonfat cream cheese
2 tablespoons nonfat cream cheese
1 1/2 teaspoons dijon mustard
1/4 cup asiago Cheese -- grated, (or parmesan)
2 scallions -- sliced
1 jalapeno pepper -- seeded, deveined and mincedRecipe
In a blender or food processor, puree the cottage and cream cheeses; add the mustard. Add the Asiago cheese, scallions and jalape–o; pulse to combine. Transfer the mixture to a 2-cup microwavable dish; microwave on High until heated through, 3 minutes. Serve at once.
Serves 8.
