Recipe Introduction
original poster's note: We think that it works every bit as well chilled.
"When Patty found that a friend's recipe for hot shrimp dip was loaded with calories and contained many hard-to-find ingredients, she went to the drawing board and came up with this supereasy, ultratasty low-fat dip."
List of Ingredients
2/3 cup part-skim ricotta cheese
1/4 cup nonfat cream cheese
1/2 pound shrimp, cooked -- peeled and diced
1 tomato -- chopped
1 onion -- chopped
1/4 cup diced green chiles -- drained
2 garlic cloves -- minced
1/4 teaspoon salt
8 ounces whole wheat italian bread -- cut into 24 slices and toastedRecipe
In a large nonstick skillet over low heat, melt the ricotta and cream cheeses. Add the shrimp, tomato, onion, chiles, garlic and salt; cook, stirring as needed, until heated throough, 4-5 minutes. Transfer to a serving bowl and serve at once with the toast.
