    4 pt. Quarterback Quesadillas

    8 flour tortillas, fat free
    1 pound boneless, shredded, skinless chicken breasts
    1 cup Monterey Jack cheese, reduced fat
    1 can chopped green chiles
    1/4 cup minced onion
    1/2 cup chopped fresh cilantro
    1/4 teaspoon salt
    1/2 teaspoon black pepper
    Dash fresh lime juice
    Salsa

    Recipe



    In a large bowl, stir together the chicken, cheese, chiles, onion, cilantro, salt and pepper. Spoon 1/8 of the filling onto each tortilla, covering half of it. Squeeze a little lime juice over filling on each tortilla. Fold the tortilla over to make a half moon. Place quesadillas on a cookie sheet. Bake at 500¼F until tortillas are crisp and golden, about 5 minutes. While still hot, cut each into 3 wedges. Serve with salsa.

    Serving Size: 3 wedges; serves 8
