6 pt. Kimber's Spicy Chicken Wontons

List of Ingredients
3 cups boiling water
1 Boneless, skinless chicken breast, poached
1 stalk celery, diced
1/4 red bell pepper, roasted
Pinch of salt and pepper
Pinch of red pepper flakes (optional)
1/2 tsp garlic powder
1/4 tsp rosemary (dried)
1/4 tsp basil (dried)
1/2 tsp chives (dried)
1tbs oil (vegetable, olive, canola, etc)
1 tbs vinegar (I use white wine vinegar)
1tbs orange juice
16 wonton skins (approx 3x3 in size)
Water
Pam or any non-fat cooking sprayRecipe
1. Pre-heat oven to 325 degrees
2. Spray glass oven dish lightly with Pam. Roast red pepper on all sides in oven until skin is bubbly.
3. While roasting pepper, place chicken breast in boiling water to poach until done.
4. Put chicken in blender or food processor.
5. Add celery, salt, pepper, red pepper flakes, garlic powder, rosemary, basil, oil, vinegar and orange juice. Do not yet blend. Marinate while doing next step.
6. Remove pepper from oven and carefully peel the skin and remove seeds, stem and veins. Dice 1/4 pepper and save the rest for another recipe.
7. Add pepper to chicken mixture and blend. Adjust seasonings as desired.
8. Spray cookie sheet with PAM.
9. Place wonton skins on cookie sheet, top with small amounts of filling.
10. Seal edges of wontons with water. Then turn the squared shape into a corner, then folder over the bottom two edges towards the center. Seal seam with the tines of a fork.
11. Bake 10-15 minutes or until wontons are golden brown.
12. Serve with a salad, soup or dip of choice. Also great as an appetizer.
