    1 19 ounce can red kidney beans rinsed & drained
    2 cups cooked brown rice
    1/4 cup salsa
    1/4 cup minced parsley
    1/4 cup shredded nonfat cheddar cheese

    Recipe



    Preheat oven to 350 degrees. In a medium bowl, combine the beans, rice, salsa and parsley; transfer to a 2 qt. casserole. Sprinkle with the cheese and bake, uncovered, until the mixture is heated through and the cheese is melted, about 20 minutes.
