    5 pt. Red Beans & Rice

    List of Ingredients

    1/2 cup onion -- chopped
    1/2 cup green bell pepper -- chopped
    1 1/2 cups tomato sauce
    1/2 teaspoon garlic -- minced
    2 tablespoons bacon bits
    16 ounces kidney beans, canned -- rinsed and drained
    2 cups cooked rice -- hot

    Recipe

    In a large skillet spray with butter flavored cooking spray, sautŽ's onion and green pepper for 5 minutes or until tender. Stir in tomato sauce, garlic, bacon bits, and kidney beans. Bring mixture to a boil. Lower heat and simmer for 6 to 8 minutes. For each serving, place 1/2 cup of rice on a plate and spoon 1/2 cup bean mixture over top.
