This is without a doubt the best yeast roll I have ever made! They turn out light, airy and only 2 pts per roll! This recipe is originally from the Gold Medal Flour company. I found it in my copy of "Kentucky Keepsakes Classic Southern Recipes" by Elizabeth Ross. I ran it through Master Cook to come up with the nutritional information to calculate the points.
List of Ingredients
1 package active dry yeast
3/4 cup warm water -- 105-115 degrees F
2 Tablespoons sugar
2 Tablespoons vegetable oil
1/2 teaspoon salt
1 egg
2 3/4 cups all purpose flour
1/4 cup butter -- melt and brush tops of rollsRecipe
Dissolve yeast in warm water in 2 1/2 qt bowl. Add sugar, oil, salt and egg. Stir to dissolve sugar and salt. Stir in 1 cup of the flour until smooth. Cover with cloth and place on rack over bowl of hot water. Let rise 15 min. Grease 9x9x2 square pan. Stir down batter and add 1 1/2 c flour. Stir until mixed. Turn onto cloth covered board. Snead 3 minutes. If dough is sticky, knead in 1/4 c flour. Divide dough into 16 pieces. Quickly shape into balls.
Arrange in pan and brush tops with butter. Cover with cloth and place on rack over bowl of hot water. Let rise 25 min. Bake 12-15 min in a 425 degree oven unitl light brown. Remove from pan to wire rack. Brush tops with soft butter. Serve warm.
