List of Ingredients
1/2 cup unsweetened applesauce
3/4 cup sugar
2 large eggs
1 cup yellow cornmeal
1 1/2 cups skim milk
1 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon saltRecipe
In electric mixer, cream together applesauce and sugar, add 2 eggs, then cornmeal. Mix well. Mix flour, baking powder and salt. Add this mixture 1/3 at a time, alternately with 1/2 cup of the milk. Pour into greased 8" square pan and bake at 375¼ for 30 minutes. Also makes 20-24 muffins.
