4 slices light wheat bread (35 or 40 calories per slice)
4 extra large egg whites

Spray a large nonstick skillet with oil and heat skillet. Add cinnamon to egg whites in a large bowl and beat with a whisk about one minute to liquefy egg whites and to incorporate cinnamon. Dip bread slices into egg white mixture. Place bread slices into skillet and cook until golden brown on each side. (2 slices bread/2 egg whites per serving.) Serves 2.
Special Notes
Cinnamon amount can vary. I use a lot, a couple of shakes of the spice jar, because I LOVE cinnamon. A sugar substitute can also be added to the egg white mixture for sweetness, if desired, for 0 additional points, or 1 T of maple syrup per serving can be added after cooking for an additional 1 point per serving. With the addition of a little fruit on the side, the day is begun with a very low point, but filling and lasting, breakfast!
