    2 pt. Honey Date Scones

    List of Ingredients




    2 cups self rising flour
    1 tsp ground cinnamon
    2 tsp margarine (20g)
    6 dates, chopped
    3 tbsp honey
    1/2 cup skim milk
    1/4 cup water
    1 tbsp flour, extra

    Recipe



    1. Preheat oven to 450¼F (240¼C). Coat a baking tray with cooking spray. 2. Sift the flour and the cinnamon into a bowl. Using the fingertips, rub the margarine into the flour. 3. Combine the honey, milk and water and stir into the flour mixture along with the dates. Mix until it forms a firm dough. 4. Sprinkle the extra flour over a cutting board and gently knead the dough. 5. Pat dough out to a 3/4-inch (2 cm) thickness. Using a 2-inch (5 cm) scone cutter, cut dough into 12 rounds and place on the baking tray. 6. Coat lightly with cooking spray and bake in the oven for 15 minutes.

    TIP! These scones can really impress friends who drop in for Sunday brunch. Serve them with a drizzle of honey or an assortment of jams.
