6 pt. Egg & Ham Roll-Ups

List of Ingredients
1 carton -- (1 cup) refrigerated or frozen (8-oz.) fat-free egg product thawed
1/8 teaspoon pepper
1 dash salt
1/4 cup fat-free cream cheese (from 8-oz. tub)
1/4 cup no-sugar-added all fruit apricot spread
4 fat-free flour tortillas (8 to 10-inch)
8 ounces sliced deli cooked low-fat ham Recipe
Heat oven to 400 degrees F. In small bowl, combine egg product, pepper and salt; blend well. Spray medium nonstick skillet with nonstick cooking spray. Heat over medium heat until hot. Reduce heat to medium-low. Pour egg product mixture into skillet; cook, stirring constantly, until set but still moist. Remove from heat.
In small bowl, combine cream cheese and apricot spread; blend well. (Mixture will be lumpy.) Spread 2 tablespoons mixture over each tortilla. Place 1/4 of ham slices and scrambled egg product down center 1/3 of each tortilla. Fold sides of tortillas over filling. Place, folded side down, on ungreased cookie sheet. Bake at 400 degrees F for 3 to 5 minutes or until thoroughly heated. Makes 4 servings.
