    7.8 pt. Spinach Mushroom Quiche

    List of Ingredients

    1 ready-to-bake pie crust
    1 can sliced mushrooms
    1/2 cup chopped onion
    2 Tbsp. Brummel & Brown
    10-oz. pkg. frozen, chopped spinach thawed & squeezed dry
    1 cup 1% milk
    1 cup egg substitute
    1/4 tsp. salt
    1/4 tsp. pepper
    1-1/4 cups shredded Mexican blend cheese, divided
    1/3 cup grated imitation Parmesan cheese
    3 Tbsp. Bacos
    1 Tbsp. dry bread crumbs

    Recipe

    Preheat oven to 350. Saute onion and mushrooms in margarine until all liquid has evaporated. Remove from heat and stir in spinach and bacon. In a large bowl, combine milk, eggs, salt and pepper. Stir in spinach mixture, 1 cup shredded cheese, and Parmesan cheese. Pour into pie crust. Top with remaining 1/4 cup shredded cheese and bread crumbs. Bake for 35-40 minutes, or until knife inserted near center comes out clean. Let stand for 5 minutes before serving.

    Serves 6.
