2 cups peeled baking apples (2 med), finely chopped
1 tablespoon grated lemon rind
3 tablespoons lemon juice
1/3 cup sugar
2 eggs
1/4 cup oil
1/2 cup matzo meal
1/3 cup potato starch
1/2 teaspoon cinnamon
1/4 teaspoon salt
GLAZE
1 tablespoon sugar
1 tablespoon lemon juice
Recipe
1. Heat oven to 350 degrees F. Spray 8-inch square pan with nonstick cooking spray. In small bowl, combine apples, lemon peel and 3 tablespoons lemon juice; mix well. Set aside. 2. In large bowl, combine 1/3 cup sugar and eggs; beat at medium speed with electric mixer until thick and lemon colored. Slowly add oil, beating until well mixed. Stir in matzo meal. 3. Sift potato starch over apple mixture. Add cinnamon and salt; mix well. Fold into matzo mixture. Spread batter evenly in sprayed pan. 4. Bake at 350 degrees F. for 25 to 35 minutes or until cake springs back when touched lightly in center. In small bowl, combine glaze ingredients; stir until sugar is dissolved. Brush over top of warm cake. Serve warm. Yield: 9 servings.
