    1 package fat free sugar free vanilla pudding mix
    1/3 c. calorie free sweetener (I prefer Equal but Splenda works)
    1 15 oz can pumpkin (I like Libby's)
    2 c. fat free cool whip
    1 teaspoon cinnamon

    Recipe



    Blend all ingredients in blender. Makes four 1-cup servings. Spoon into a pretty cup, add a tiny dollop of cool whip and a sprinkle of cinnamon, and enjoy!

    Serves 4.

    Original Poster's Notes: I have seen other versions of this recipe, but I have experimented and this one tastes best to me - add your own spices to taste.

    I figured the points like this:
    pudding mix: 100 calories, 0 g fat, 0 g fiber
    pumpkin: 140 calories, 1.5 g fat, 15 g fiber
    cool whip: 120 calories, 0 g fat, 0 g fiber
    Cinnamon and equal, no calories
    Total that is 360 calories, 15 g fiber and 1.5 g fat. Per serving is: 90 calories, about 4 g fiber, and less than .5 g fat. That equals one point!
