    1 cup Egg Beaters¨ 99% egg substitute
    1/2 cup sugar
    3 tablespoons instant coffee granules
    3 tablespoons cornstarch
    2 cups skim milk
    cinnamon -- optional
    Cool Whip Lite¨ -- optional
    Fat-free whipped cream -- optional

    Recipe



    Pour Egg Beaters into small bowl, set aside. In medium saucepan, combine sugar, espresso powder or coffee & cornstarch. Slowly whisk in milk. Cook over medium heat, stirring constantly, until mixture boils. Boil & stir 1 minute. Slowly whisk 1/2 cup of the coffee mixture into Egg Beaters, then slowly whisk egg mixture back into coffee mixture, stirring constantly. Cook over low heat, stirring constantly, about 1 minute. Pour into six 6 oz
    serving cups. Refrigerate at least 2 hours. Serve w/ Fat Free Cool Whip Lite¨, Cool Whip Lite¨ or FF Whipped Cream & cinnamon if desired.

    Serves 6.
