    Cheesecake: 3 pt. Pumpkin Ricotta Cheesecake

    List of Ingredients

    12 honey graham crackers -- made into crumbs
    1 1/3 c nonfat dry milk powder
    3/4 c part-skim ricotta cheese
    3/4 c egg beaters¨ 99% egg substitute
    2/3 c lowfat cottage cheese
    1/2 c canned pumpkin
    1/4 c firmly packed light brown sugar
    1 tbsp lemon juice
    1/2 tsp vanilla extract

    Recipe

    1. Preheat oven to 300¼F. Spray an 8-inch springform pan with nonstick cooking spray. Sprinkle bottom of pan evenly with graham cracker crumbs.

    2. In a blender or food processor, puree remaining ingredients until smooth; pour mixture into prepared pan.

    3. Bake 50-60 minutes, or until knife inserted in center comes out clean. Cool completely on rack. Cover and refrigerate until ready to serve.

    Serves 8. Per serving: 160 calories, 1 g fat (0.6g saturated fat), 1g fiber
