64 Saltine crackers, low sodium
1 Package vanilla pudding, instant, ff and sf -- 4 serving size
1 package chocolate pudding, instant, ff and sf -- 4 serving size
4 cups skim milk
2 cups Cool Whip Lite¨ (or Cool Whip Free)Recipe
Make each pudding separately according to pkg directions. In an 8x8 pan, make the following layers:
1) 16 crackers
2) chocolate pudding
3) 16 crackers
4) 1 cup cool whip
5) 16 crackers
6) vanilla pudding
7) 16 crackers
8) 1 cup cool whip
Cover and refrigerate at least 12 hours before serving. Makes 9 servings.
RECIPE VARIATION: Use 1 cup cool whip lite and 1 jar strawberry sundae topping or jam, and layer as follows:
16 crackers; 1/2 of vanilla pudding; 16 crackers; 1/2 of chocolate pudding; 16 crackers; 1/2 of vanilla pudding; 16 crackers; 1/2 of chocolate pudding. Place in fridge and let set several hours. Decorate top with cool whip and whole jar of sundae or jam topping. Place in fridge several more hours to let crackers absorb moisture from the puddings.
NOTES : POINTS: 4 points per serving.
Don't crumble the crackers.
Kathy's note: Recommend using a slightly larger pan next time!
