    Kathy's notes: My Mom made this for Easter. It was wonderful. We cut it into bars because the recipe didn't rise up very much. I'm not sure if she got an old cake mix or what. Anyway, the recipe made a wonderful low point lemon bar.

    List of Ingredients




    1 pkg lowfat White Cake Mix
    3/4 cup lemon juice
    3/4 cup water
    1 cup fat free sour cream
    grated lemon peel from 1 lemon
    1 - 3 oz pkg Lemon gelatin
    3 egg whites
    1/2 teaspoon lemon extract

    Glaze:
    1 cup powdered sugar
    2 T lemon juice

    Recipe



    Preheat oven to 350. Combine cake ingredients. Bake in a sprayed 13 x 9 glass baking dish 40-45 min. Combine glaze ingredients and stir by hand until smooth. Pour over warm cake.
