    Bars: 5.5 pt. Carob-Carob Chip Bars

    Recipe by: New Farm Vegetarian Cookbook, shared by Colleen
    Combine in a saucepan:
    1/4 cup flour
    1/2 cup water
    Cook and stir until thick. Cool.

    Blend until smooth:
    1/2 cup tofu
    1/4 cup oil
    1 1/4 cup water
    1 cup sugar
    1 tsp. vanilla or peppermint flavoring

    Mix together:
    3/4 cup flour
    1 tsp. baking powder
    1/2 cup carob powder

    Add the flour and the water paste to tofu mixture, then stir in the dry ingredients. Last, stir in 1 cup carob chips. Add 1/2 cup chopped walnuts or pecans if desired. Put into an oiled 8x8 pan. Bake at 350¼ for 25 minutes. Cool.

    Cut into 12 bars.
