***STIR-CRAZY CHOCOLATE CAKE***
1 1/2 cups all-purpose flour
1/2 cup granulated sugar OR sugar substitute to equal 24 teaspoons sugar
3 tablespoons unsweetened cocoa
1/2 teaspoon salt
1 1/4 teaspoons baking soda
1 cup water
1 tablespoon white vinegar
2 teaspoons vanilla extract
***CHOCOLATE WHIPPED "CREAM"***
1 envelope low-calorie whipped topping mix (191 calories per 1 1/4 ounces package)
1 tablespoon unsweetened cocoa
1 tablespoon granulated sugar
1/2 cup skim milk Recipe
Stir-Crazy Chocolate Cake: Combine first 6 ingredients in a 9-inch round or square nonstick cake pan. Stir well. Pour the water, vinegar, and vanilla directly into the pan. Stir with a spoon in a circular motion until all ingredients are well blended. Level the surface with a spoon, then place in a preheated 350 degrees F oven. Bake for 25 minutes, or until the cake springs back when gently pressed. Serve hot or topped, if desired, whipped "cream". Makes 12 servings.
Chocolate Whipped "Cream" 1 In mixing bowl, combine all ingredients and beat with an electric mixer until mixture becomes the consistency of whipped cream. Serve with Stir-Crazy Chocolate Cake. Refrigerate unused portion. Makes 32 servings, about 1 tablespoon each.
