1 package angel food cake mix
1 cup water
3 tablespoons water
2 tablespoons lemon juice
3 drops yellow food coloring
1 teaspoon grated lemon rind Recipe
Preheat oven to 375 degrees F. Prepare cake mix as directed on package using combined water, lemon juice and yellow food coloring instead of the 1 1/3 cups water called for. Add grated lemon rind. Pour batter into 10-inch tube pan. Cut through batter with knife or spatula to remove large air bubbles. Bake for 30-40 minutes or until top is golden brown, firm and dry. Do not underbake. To cool, hang pan upside-down on funnel or bottle at least 1 1/2 hours. Remove from pan. Cut into 12 pieces.
