    Cake: 3 pt. S'mores Cakes

    List of Ingredients




    2/3 cup of flour
    2 1/2 cups of graham cracker crumbs
    2 teaspoons pf baking powder
    1 cup of nonfat milk
    1/2 cup of unsweetened applesauce
    1 teaspoon of vanilla
    3 egg whites, slighty below room temperature
    1/4 teaspoon cream of tartar
    1/2 cup of sugar
    2 cups of miniature marshmallows
    1/4 cup mini chocolate chips

    Recipe



    1. Preheat oven to 350 degrees. Spray 2 8-inch cake pans with nonstick cooking spray.

    2. Stir together flour, graham cracker crumbs and baking powder into medium bowl. In another bowl, combine nonfat milk, applesauce and vanilla. Add to dry ingredients, stirring just until blended.

    3. Beat egg whites until frothy. Add cream of tartar and continue beating until thick and foamy. Gradually add sugar, beating until soft, smooth peaks form. Fold half egg-white mixture into batter until blended. Fold in remaining whites until just blended. Divide batter between prepared pans, spreading evenly.

    4. Bake for 15-20 minutes, or until wooden pick inserted in center comes out clean. Preheat boiler.

    5. Sprinkle marchmallows, then chocolate chips over the tops of hot cakes. Place under broiler to brown lightly. Let cool slightly. Remove from pans and serve warm.

    Makes 2 cakes (16 servings) 3 points per serving
