Dhorvy's note: This recipe was originally 4 points per serving using reduced fat cream cheese and egg beaters. I found fat free cheese and got the points down to 2 per serving - makes 16 servings when in an 8 by 8 pan. Not too bad for a crustless cheesecake. I use 1 tsp lemon extract and 1 tsp vanilla for a different flavor.
List of Ingredients
1 cup sugar
2 teaspoons vanilla
24 ounces fat-free cream cheese
1 cup egg substitute, liquid -- beatenRecipe
Soften cheese and combine with rest of ingredients. Beat til smooth. Pour into buttered 8 Inch square dish. Bake @ 350 for 30 Minutes. Will seem soft in center. Let cool and will set. (May need to reduce cooking temp if using a glass dish).
Serves 16.
Kathy's note: Tried this using part Splenda - got a little too dry cause I forgot to adjust the cooking time for the Splenda.
